I cannot begin to explain my admiration for a good sandwich, especially the melted variety. Grilled cheeses have been a staple of my childhood, and ever since I have sought out gourmet varieties that embody both my love for the classic sandwich and need for new and sophisticated flavors.
As a shameless messy eater, I embrace eating with my hands whenever possible; it makes the eating experience all the more personal. Just another reason grilled cheeses are one of my favorite eats of all time.
For this sandwich I played with nutty and fruity flavors. This sweet and nutty grilled cheese combines melted brie, toasted pecans, chopped dates, and honey. Crusty Tuscan white bread is the glue that holds all this goodness together.
- 2 slices of hearty, bakery-style white bread (I used a crusty Tuscan white).
- A few ounces of good quality french Brie
- 3 fresh dates, pitted and chopped
- A small handful of pecans, toasted and coarsely chopped
- Drizzle of honey
Begin by toasting the pecans. Preheat your oven to 350 degrees and spread the pecans in a single layer on a baking sheet. Roast until fragrant for about 5 to 10 minutes. Stir gently after a few minutes and carefully watch so that the nuts do not burn.
To assemble your grilled cheese, generously butter each slice of bread on one side. Layer the bread with a couple of slices of brie then top with dates and nuts. Drizzle honey across the bread and top with more brie. Cook the grilled cheese until the bread is crispy and brown and the cheese has melted.
